Seared Tofu with Blueberries and Basil

A stressful week of exam preparations was good for me in culinary terms, here's a new tofu with blueberries recipe :)

Ingredients:
  • ¼ organic firm tofu, sliced
  • ½ cup cherry tomatoes, sliced in half
  • 1/3 cup blueberries
  • 1 tsp cooking soy sauce
  • 2 tbsp olive oil
  • 1 tsp italian seasoning
  • Salt, black pepper to taste
  • 1/3 cup mixed greens
  • 4-5 leaves fresh basil, chopped
  • 1 tsp rice vinegar

Preparation:

In a large skillet pour olive oil, and place slices of tofu, bring to high heat, and then reduce to medium. While tofu is cooking, slice tomatoes and add them to the skillet. Also add all other ingredients, mix well and then keep searing it all for about 5 minutes more, turning tofu from time to time.

Basil and greens should be added last.

Serve on basmati rice, and add some kalamata olives.
